BREAD AND PASTRY KNIFE

A 250mm serrated bread and pastry knife with a white handle. This is a professional bakery knife rather than a household one — the blade length alone tells you that, since 250mm is enough to go through a full sourdough loaf in a single stroke.

The blade is high-quality stainless steel alloyed with molybdenum and vanadium. Those two elements are what separate a knife that holds an edge from one that doesn't: molybdenum for corrosion resistance, vanadium for hardness and edge retention. On a serrated blade that matters more than usual, because serrations can't be honed at home the way a straight edge can.

The serration pattern is cut for crust — it saws through a hard crust without crushing the crumb underneath, and it handles pastry and tomatoes just as cleanly.
